
Cooking in the Wok
Description
This is a simple and delicious dish you can make in a wok or large frying pan. It’s easy and quick to make, so we have it a few times a month.
Ingredients
- 1/4 cup of oil
- 6 or more garlic cloves
- 1 pound of chicken breast, cut into small pieces
- 1-2 sliced red, yellow, or green bell pepper
- 1/2 cup of roasted cashew nuts
- 1 medium onion, chopped
Sauce
- 2 tablespoons of fish sauce
- 2 tablespoons of oyster sauce
- 2 tablespoons of sugar
- 1/8 teaspoon of ground white pepper

Ready to eat on Brown Rice
Preparation
Combine the sauce ingredients in a small bowl and stir until mixed.
Heat a large skillet or wok on a medium-high setting and add the oil, garlic, chicken, and sauce. Stir occasionally while sauce thickens and chicken cooks. Covering the skillet or wok will keep the sauce from thickening prematurely if you prefer a wetter consitency.
After several minutes add the onion and pepper.
When the dish appears to be nearly done, stir in the cashews and allow the sauce to thicken to your liking.
Serving
Thai Cashew Chicken goes very well over brown rice.
